I've got the same set-up and use a folding sack cart from Go Outdoors. Full one from the tap and waste to dump, all on one cart. A bungee cord holds it secure on the cart.
------------- Some days you are the dog,
some days you are the tree.
I started off using a sack cart and bottles like those. Because the light gets to them they grow algae, then when you take them to the tap all the weight is transferred to the handle so they are heavy to move. I swapped for an Aquaroll and move 40 litres with ease just once a day.

For a licence dated 1997 or later you must add together the plated max weight of the caravan and trailer, if the total is 3500 or less you can tow it. You may even tow a caravan with a MAM greater than the cars unladen mass the restriction was removed in 2013

To me your asking for trouble. One, they will heat up quicker on a hot day. Two, your not supposed to leave a bottle of water in a car if the bottle is plastic as it breeds germs when the car gets hot and to me you have done some thing similar unless you cover them on hot days.
Aquarolls are plastic too . . . I`m not sure that we get enough germs these days, living in a sanitized world as we do. Expect Government Legislation concerning Germs Rights in the next Parliament in an attempt to rectify this matter.
------------- Peripheral people don`t have as much excitement but they sure live longer
Once the 'tree huggers' and other 'do gooders' get wind of the fact that germs die in their millions when Domestos and other similar products are deployed there will be an outcry and demands for a public enquiry into this atrocity and the wanton murder of germs.
Picket lines outside the Domestos offices may ensue.
Been using plastic water bottles for nearly 50 years and never had any problems. Think we got our quota of germs when we were growing up in the 40s-50s .No Health and Safety then.

Hi you must get through some water on long stays
I arrive, fill the aquaroll with 40 litres, go back to the van pump it into the internal tank, use it to fill the hot water system, then go back and refill the barrel and pump about half of that into the tank. Thereafter Just before teatime I pump what is left in the barrel into the rank, go to fill the barrel and pump, till the internal tank is full. Since I changed from a 300 litre Aquaroll to a 40 litre one I have never needed to go morevthan once a day.

Sounds like a good idea to me. I had something similar in a romahome demountable once, but the tank was stored inside. Personally, I would cover them over with something reflective so that the sun doesn't get to them.
The aqua rolls were too big for me, so I bought a 23ltr fiamma tank, which is just perfect for me.
I used to use one of these for topping up the onboard tank on the motorhome (once filled on arrival with a hose). I never bothered about germs building up as the mrs gets through it too quick.
Im on a couple of 40L 'rolls' now, and its rare they last a whole day.
Differing grades of plastic for different uses, I'm not sure I would use these type of containers. Nothing to do with H&S it's about correct use of the container. It may be used on a regular basis and be clean but the action of sunlight on the water and plastic can cause unknown problems. If it was all safe why do most people clean their pipes out each season?
40L aqua roll lasts about a day for me and that's not with any showering as we use the site facilities for that. The first few times I was a way I was convinced I had a leak. Turns out 40L is needed for drinks, washing up and hand washing etc.
I had used the cans as above but I find the aquaroll easier plus the kids think it's great fun.
My waste is 50L and that gets emptied each day when the fresh water is filled. I can actually roll the aquaroll and waste both at the same time but I walk like an eqyptian whilst doing so.
