Just leave a window in each area on vent. We have never wintered our van - it lives on the drive and if its a really really cold spell we put the van heating on low just to keep the chill off it.
You will have permanent ventilation in floor & toilet, locate vents & ensure they are unobstructed. You may need to leave cupboard doors open & also toilet door.

Warm air is more likely to be damp than cold air but air in caravan will be at its dampest when it is being slept & cooked in. All any sort of absorbent crystals or salt will do is extract moisture from the small amount of air that actually passes over those crystals so will serve no usful purpose. Ventilation to allow air to circulate in & out is most important.
