If you remove one of your rear light clusters you will find the securing bolts screw into rubber grummets which spread and seal when screwed into.
These can be bought readily and if you drill holes for same of correct size you should have no problems.
As for the cable you can use electrical rubber grummet finished off with any caravan sealant.
As caravan manufacturers readily use this type of fixing I cant see you having problems and your supply should come from your caravan reversing light/s unless you intend to use as a rear view mirror when on the road.
If you have a clear rear window the camera can be mounted inside which will help to keep it clean.
I have seen baby monitors fitted this way the type that work on radio signals but camera and receiver still need a supply.
Do not spoil you ABS or Glass fibre reared end by skimping on a blunt drill bit buy a good sharp one new one.
Your gonna need more than just a twist drill for most rubber grommets.
Mine was 20mm and I had a hole cutter to suit.
Also if using self tappers in alloy it's better to punch pilot holes with a sharpened nail or similar rather than drilling them of just driving the screws in; it gives a much better purchase in thin sheet.
