We have a Swift Conqueror 565 and love it. Unfortunately they haven't made the 565 in the Conqueror range this year, we bought a demonstrator 2014 in February.
Bailey do the Unicorn Cadiz 3 with twin beds. It's a lovely van but preferred ours.

we have just bought the Bailey Unicorn Cadiz and had our first try of the van this weekend. 2 single fixed beds. Absolutely love it. We had a fixed bed before and it's a great upgrade.
We have a Swift Challenger 565 Dealer Special with fixed single beds and would not change it for any other layout. We love it. We have also had 2 fixed double bed vans in the past but this layout works for us.
We have a bailey rimini .
They layout has to be the best , we looked at so many . I love this lay out it is so comfortable . Just a shame about the make and quality .
Practical Caravan magazine has a section that shows layouts by van, it also shows all weights, dimensions and price when new.
Combine that with You Tube and you can check out what your new van will look like, even if it's to view a previous years model
We used this approach to help us choose a 2013 Bailey Unicorn Cadiz, apart from the price tag and depreciation hit we preferred the slightly different layout to a new 2015 model
Our Lunar Lexon 640 has them, and our previous Compass Rallye 650 did.
Elddis and Lunar have the widest beds ( 2 ft 7 ins), Bailey the narrowest ( 2ft. 3 ins).
Elddis use Coolmax memory foam mattresses ( lovely!), the bed-top is higher, and they fit gas struts to aid the lifting-up to get at the storage under.
Lunar fit their beds lower and the tightwads dont fit gas struts .... and their sprung mattresses are heavier to lift.
My caravelaire ambience style 450 has a rear lounge that converts into a double bed and 2 fixed single beds at the front that are 3ft wide and over 6ft long and are very comfortable.
