If you install a 2kW water heater then that will be drawing nearly 9 amps. which if you are on a 10 amp. electric hook up you will be drawing the maximum capacity of power so you won't be able to use any other electric appliances simultaneously without tripping the circuit.
I'm not an electrician by any means so I can't advise on installation but I have a conversion list from Watts to Amps which 1 kW. will of course draw half of the 2 kWs which is approx. 4.4 amps.
However, the Cascade 2 water heater (GE model) can be powered by 240 volt mains power anyway as it has a built in heater element so why do you need to exchange it for a different water heater?

I had to remove the Carver Cascade 2 water tank myself on my previous caravan so have the knowledge of how it is assembled and functions.
Inside the tank around the circumference is a big 'O' ring that fits on an angled taper which makes a water tight seal and it's most likely that this is the part that needs replacing which is much cheaper that installing a new water heater. The difficult part is removing the tank as there are both gas and electrical connections but if you are a DIY expert then there is no reason why you can't undertake the repair yourself. The tank has 4 long tie rods held together by nuts that secure the end plates so on re-assembly the nuts need to be tightened in sequence equally to obtain a permanent seal on the 'O' ring. The task is a bit time consuming but if you are confident with DIY and have a set of open ended and ring spanners then it's worth trying the repair first. However I found the following information on the net which may be useful:

If this is the gas electric water heater then disconnect the electric from the power supply, IE pull out the electric hook up from the caravan switch off all gas and disconnect the bottle switch of all 12v supply disconnect the battery, drain all the water from the heater and pipes disconnect the water pump drain down the system remove the electric supply from the power switch to heater.
From out side the motor home/caravan remove the 4 cross headed screws on the cowl normally it will have cascade 2 on it, remove the 9 cross headed screws around the heat exchanger.
From inside the van gently rock and push the heater until the oil based mastic seal parts, do not push the heater completely out just yet. From out side the van gently pull the heater so you can see the pipe connections held by clips remove them (blue pipe and red pipe) disconnect the lead to the black box under the heater and now completely remove the water heater.
Now place the heater heat exchanger on to a flat floor surface, and remove if electric the 3 small bolts/screws on the white housing cover, USE A CAMERA and take lots of pictures throughout or make a diagram of the wires pipes etc to help reassemble, disconnect all the wires and remove the small plastic bolt in the Centre of the tie bar, remove the white box.
Now with a spanner/socket/wrench remove the big nut from the tie bar and remove the spacer and seal, gently rock the tank until you can feel the release of the tank (standing on the lip both sides of the exchanger helps) and now lift the tank off the tie bar.
