Similar to a lot of others, ours is left in situ but pulled away from exterior walls and where possible stood on edge to allow better air circulation. When we stayed at a previous house we had a spare room and I did bring the upholstery in then but no such luck now so it all stays put. I do have the benefit of storing the van at home so it does get aired on a regular basis.
Regarding the comment about removing the upholstery being a theft deterrent, I have heard others say this but personally have my doubts. I think a lot of those that steal vans wouldn't be too bothered about getting some plain foam cushion cut and using that. No doubt if there was a choice of stealing a van with or another without upholstery they would go for the "with", all things being equal security wise, but I don't think these guys are really that particular.
1. Open the fridge & freezer compartment to avoid mildew etc
2. Drain the entire water system to avoid cracking of pipes/heater through freezing wayer freezing

Place bedding in wardrobe rather than usual position under bed.
Apart from that no special precautions with bedding over 15 years of "vannin"

we pull out the slatted base in the front double and then stack all the seating on top of each other in the middle, and then we open the cupboards and roof lockers just a little so no strain on the struts for air to move around
